Add a unique healthy touch to your traditional Roasted Tomato dish with grilled Halloumi cheese & mushrooms!
For this taste journey you need:
- 4 peeled fresh organic tomatoes cut in small cubes
- 1 tbsp tomato paste
- 2 garlic cloves, crushed
- Salt and pepper
- 2 tbsp olive oil
- Halloumi cheese
- Fresh organic Mushrooms
-In a preheated pan, drizzle olive oil then sauté the crushed garlic, add tomato cubes & cook for 10 minutes.
-On low heat add fresh parsley, salt & pepper, cook for seven minutes then add the mushrooms and mix.
-In another pan add 1tsbp olive oil and grill the Halloumi cheese until gold in colour.
-To serve, add the halloumi cheese on top of the tomato & mushroom mix.
